Fortis Academy students recently embarked on an unforgettable journey through the worlds of culinary mastery and historical remembrance, thanks to thoughtfully organized field trips that combined flavor, culture, and critical lessons from the past. For aspiring chefs and food enthusiasts at Fortis Academy, a trip to Xochi, one of Houston’s premier dining destinations, offered an immersive glimpse into the art and business of gastronomy. Nestled in the heart of downtown, Xochi is renowned for its celebration of Oaxaca’s indigenous culinary heritage. The restaurant’s chefs dazzled students with a menu that ranged from mole—a rich, complex sauce with deep cultural roots—to the adventurous crunch of edible insects, a traditional delicacy in Mexican cuisine.
