Dietz Fischer is opening an exciting new addition to the experience at Fischer & Wieser’s Farmstead in Fredericksburg, Texas. Dietz Distillery is located right next to Das Peach Haus and will officially open its doors in November 2021.
“I grew up helping out in our family business, Fischer & Wieser Specialty Foods, and that’s where I became interested in creating a unique product and bringing it to market,” Fischer said. “While attending Texas A&M studying Mechanical Engineering, I became interested in distilling, and I began to study the process in between classes.”
Fischer gained an internship at Garrison Bros. Distillery in Hye, Texas and then traveled to Austria to study fruit distillates with family friend Marcus Wieser of Wieser Wachau. “Small scale distilleries have a long tradition in Central Europe and working with Marcus made me realize that a distillery focused on producing smaller batches of high-quality spirits out of fruits from the family farm was exactly what I wanted to do,” Fischer said. “Thankfully, we had an orchard full of fruit and a place right on Fischer & Wieser’s Farmstead for me to set up shop to help me get started,” he added. Fischer then went on to earn his Diploma in Distilling from the Institute of Brewing and Distilling in Edinburgh, Scotland - an intensive three-year program.
Dietz Distillery will be producing several varieties of fruit distillates from the ripe fruits from Fischer & Wieser’s Orchards, including Peach Brandy and Pear Brandy among other varieties. Dietz is also creating a “Texas Style” Gin - called Five Judges Gin. It’s named for the five judges that have lived on the property, including JB Wieser, Jarvis Wieser and Mark Wieser. It will be flavored with locally sourced ingredients like Texas citrus and other botanicals. Customers will be able to sample the product, order a cocktail and enjoy the property, as well as learn about the distilling process when they visit.
